Healthy-Happy Easter Eggs!!!!



Eggs: Blend cashew, bit of coconut oil and honey in food processor until moldable. Use cacao, acai, green tea and coconut powders for colors.

Nest: Dip organic pretzels in dark chocolate with sea salt.

Cherry Tomato Mini-Skewers

Here's an easy appetizer recipe for parties - Cherry Tomato Mini-Skewers!




You Need:

1 Box of Cherry Tomatoes
2 Golden Beets (Steamed)
Toothpicks

For dressing:

Grated Ginger, Lemon Juice and  Fresh Basil (I used dry basil in this one. Fresh is much preferred)


Direction:

Get a cap like this that fits the size of a cherry tomato when cut in half. You will need the golden beet (or anything you want to sandwich with the cherry tomato) to fit this shape.

Just like the picture here.


Put together with a toothpick.


Serve with any dressing you like. In this, I used grated ginger, basil and lemon juice. Enjoy & Have fun! :)

Homemade Herbal Cough Drops

This recipe would require some time to make, so hopefully, you are doing this before you get too sick to make.  


Herbal Cough Drop - I call it "Maricola!" :D

Ingredients:

1cup buckwheat honey
Ginger root juice (strain the grated ginger)
Lemon juice
Drops of black elderberry extract (Do not use during pregnancy or Lactation)
Drops of slippery elm extract (Do not use during pregnancy or lactation)
2 Tea bags of Echinacea Plus (brand: Traditional Medicinal) --- Boost immune system
2 Tea bags of Camomile Tea (same brand)

Direction:

First, boil the tea bags of Echinacea and Camomile until the hot water is really dark (and smells like Ricola!) You just need maybe 20 drops from this "extract." You can drink the rest as tea. You can actually just use the tea bags that are made to cure cold/flu.

Then, mix all ingredients in a saucepan and heat it up until it gets foamy and really dark. Drop a bit amount in an icy water to see if it gets really hard. Pour it in a hard candy mold and pop them out when hardened. Use kudzu powder on the candies so that they don't stick together (note: wait till the candies cool off). I also put extra kudzu powder in the jar to make sure.

All of the ingredients are good to fight cold/flu. DO NOT USE Elderberry and Slippery Elm if you are pregnant or lactating!!

Made a couple of candies to go by wrapping them up with parchment paper.



Homemade Natural Cough Syrup (Easy recipe!)

Here's an easy recipe for Natural Cough Syrup:

So easy! You could make this even when you're sick!


Just mix ginger root juice (strained from grated ginger root) and raw honey (buckwheat honey works best). Portion is half and half. You could also add lemon juice.


Rest well. Feel better! <3

"Broccoli Stem" Cole Slaw

Wait! Don't throw away the broccoli stems!!

I hate to see organic broccoli stems thrown away. They're full of nutrients - Calcium, iron, Vitamin C, A...!!

Here's one way to prepare - a delicious dish - raw and nutritious - "Broccoli Stem" Cole Slaw!!!!



Ingredients:

Broccoli Stems
Rainbow Carrots (or any colorful veggies)
Raw or roasted almonds (or any nuts)
Lemon juice
Extra-virgin olive oil or grape seed oil
Apple cider vinegar
Honey


You Need:

A shredder or peeler
Food processor or blender


Direction:

1. Clean up the stems like the picture below:



2. Shred the broccoli stems:




3. Shred the rest of the veggies and mix them with the broccoli shreds:



4. Chop up the almonds into small pieces in food-processor or blender:




5. Mix the nuts into the veggies and season them with olive oil, vinegar and honey.  Make sure you press the veggies together with hands or a wooden spoon. It tastes better the next day when the veggies, esp. the broccoli stems soak up the seasoning.  Enjoy!

Keep warm this winter with "Vegetarian Spicy Miso Ramen!"

Vegetarian Spicy Miso Ramen





I used the carrot&Celery juice pulp for broth. Used Natto Miso. Zucchini noodle (used my favorite spiralizer). A couple of Shiitake mushrooms and a sprinkle of cayenne pepper & sea salt. HOT!

"Holidays Are Here" with a WREATH On Your Plate!!!

You know holiday season is here when you start seeing Christmas Wreaths on house doors. I truly love and am inspired by the roundness of the wreath. So, I made a raw and organic veggie wreath on a plate! Eat with your favorite dressing.  Wishing you and your loved ones a round, heartful and healthy holiday season!!!



Ingredients:
Purple romaine lettuce
Cucumber
Kale
Almond butter (For "clay" to stick the veggies together. Easy to make. Just put a cupful of any nuts in a food processor for 10-15 minutes!)
Cauliflower pegs 
Broccoli pegs (Can also use small pieces of kale)
Red pepper dice



Direction:


First, cut and place the purple romaine lettuce on a round plate.
(The purple will add a nice shade to the evergreen kale later on.)
Then, place cucumber chips on top. 
(Use a round glass jar in the middle to make sure the wreath will stay round.)
Add an almond butter "clay" on top of cucumber chips.




 Cut the Kale into small "fans"
and stick them on the Almond butter "clay" like a bowtie / butterfly.




It's going to look like this.




Now, it's time to plant the cauliflower pegs!
(Plant them crossing the kale butterfly / bowtie.)

Add red pepper pegs and broccoli pegs 
to fill the empty spots.




Add a red pepper ribbon to make it look authentic!




Pick it up and eat it with your favorite dressing!
