Raw Blueberry-Banana Cake

It was a fine start of the day, sitting in nature, having a raw blueberry-banana cake for breakfast.



This is a mini-size. Used the mini food-processor and mold. Frozen bananas and fresh blueberries. Crushed the raw almonds and dates for the crust. Topped with greasy blueberries and shredded coconuts. Made me feel alive and cheered me up in this uncertain time. Hang in there, everyone.

Unsweetened Chocolate-Drizzled Banana Splits for Breakfast

For breakfast, I had unsweetened chocolate-drizzled banana ๐ŸŒ splits with berries. Neither the whipped coconut cream or chocolate bark has sweetners. Bananas make up for it.

ๆœ้ฃŸใฏ、ใƒ™ใƒชใƒผ้กžใ‚’่ผ‰ใ›ใŸใƒใƒŠใƒŠ๐ŸŒใ‚นใƒ—ใƒชใƒƒใƒˆใงใ—ใŸ。ใ‚ณใ‚ณใƒŠใƒƒใƒ„ใ‚ฏใƒชใƒผใƒ ใฎใƒ›ใ‚คใƒƒใƒ—ใ‚ฏใƒชใƒผใƒ ใจๆฟใƒใƒงใ‚ณใ‚’ไฝฟใ„ใพใ—ใŸใŒ、ใฉใกใ‚‰ใ‚‚็ ‚็ณ–ใ‚„ใ‚นใ‚คใƒผใƒˆใƒŠใƒผใ‚’ไฝฟใฃใฆใพใ›ใ‚“。ใƒใƒŠใƒŠใฎ็”˜ๅ‘ณใŒไธๅบฆใ„ใ„ๆ„Ÿใ˜ใงใ™。




Split two bananas into halves, placed cushions of whipped coconut cream (mixed colors of beet root powder and blue superfood powder) for the berry family to lie on. Sprinkled crushed almonds and drizzled melted  100% cacao chocolate bark over them.

Coco-Whipped Pumpkin Pie with Nuts and Seeds (Non-Bake version)


[Coco-Whipped Pumpkin Pie w/ Nuts-n-Seeds](ใ‚ณใ‚ณใƒŠใƒƒใƒ„ใƒ›ใ‚คใƒƒใƒ—ใ‚ฏใƒชใƒผใƒ ใจใƒŠใƒƒใƒ„้กžใ‚’ใพใถใ—ใŸใƒ‘ใƒณใƒ—ใ‚ญใƒณใƒ‘ใ‚ค).

Sometimes I like to eat healthy sweets like this raw pumpkin pie. ใŸใพใซ้ฃŸในใ‚‹ใจ็พŽๅ‘ณใ—ใ„ใ‚นใ‚คใƒผใƒ„。ไปŠๅ›žใฏใƒญใƒผใƒ‘ใƒณใƒ—ใ‚ญใƒณใƒ‘ใ‚ค.

Crust:
3/4 cup almonds.
4 pitted dates.
1tbsp almond milk.
.
Fillings:
1 can of pumpkin purรฉe.
2tbsp almond milk.
2tbsp coconut butter.
1tsp vanilla extract.
2tbsp honey.
Sprinkles of cinnamon.
Pinch of sea salt.

Coco whipped cream:
1 can of refrigerated coconut cream. Use only the white creamy part. Not the coconut oil(use it for smoothies later).

Toppings:
Crushed almonds, pistachios, pumpkin seeds, coconut flakes, hemp hearts.

Blend the crust ingredients and press them down in the 6” springform pan. Blend the fillings and pour into the pan. Whip the coco cream. Spread generously onto the pie. Blend the toppings and sprinkle them onto the whipped coco cream. Freeze and serve.

Raw Brownie Bites

【Raw Brownie Bites】



Needed a gluten-free dessert, so I made this sweet-n-chewy raw brownie bites today. ๐Ÿ’—

No Baking Necessary! Oh, it’s dairy free, too ๐Ÿ™‚

Ingredients:

1/2 cup shredded pitted dates
1.5 cup almond flour (gluten-free)
2tbsp raw cacao powder
3/4tbsp coconut milk
1tbsp coconut oil

Directions:

1. Blend all the ingredients in a food processor.

2. Mold them in mini baking cups placed in mini muffin pan.

3. Put them in a freezer for at least 1 hour.

4. Serve! ๐Ÿ˜‹

Smoothie Parfait

Banana Sushi "Caterpillar Roll"

Spring is caterpillar season!  So, I got inspired to make a "Caterpillar Roll" sushi with banana & avocado for an early morning dessert! <3




YOU NEED:

1 Banana
1/2 Avocado
Crushed nuts ( I used roasted almonds and crushed them in food processor)
2 small blueberries (for eyes)
Thyme stems (for antennae)
Squeezed lemon juice (to keep the "caterpillar" from discoloring and to bring out the flavor in the Sauce)


SAUCE (substitute for "eel sauce"):

Honey, cacao powder and cinnamon  (you need a plastic squeeze bottle)



DIRECTION:


1. Pour lemon juice on banana first. Slice a halved avocado into thin pieces, and push it to lie flat. Soup the sliced avocado with a knife and place it on the peeled banana.



2. Use the plastic wrap to press the avocado pieces onto the banana so that they would stay stuck   together nicely.  Pour lemon juice on avocado after unwrapped.



3. Put the blueberry eyes (with "honey glue") on the caterpillar face, and stick the thyme stem antennae onto the caterpillar head.  Sprinkle the crushed nuts and decorate the "caterpillar" with the sweet sauce.



Nice and healthy "dessert sushi!"  :)

Raw 'Ohagi' balls and 'Dango' sticks (Raw version of the 'Traditional Japanese Sweets')

Raw 'Ohagi' balls and 'Dango' sticks! 

My cousin sent me a pic of 'Ohagi (Japanese traditional sweets)' which inspired me to make my "Raw Ohagi Balls & Dango Sticks!"

Ingredients:
1 cup of Walnuts
6-7 pitted dates
Green tea powder, coconut flakes, cacao powder

Direction: Blend the walnuts and dates. Make balls. Roll the balls in green tea powder, coconut flakes or cacao powder. Stick the little balls in a mini-skewer. Voila!
