Herb-based Veggie-Chia Porridge

[Herb-based Veggie-Chia Porridge](ハーブ風味の野菜チアシード粥).

Inspired by a traditional Japanese dish “Nanakusagayu” which means “Seven Herb Rice Porridge.” On the seventh day of the New Year, we prepare this herbal breakfast meal, wishing for good health throughout the year.

Traditional Ingredients “7 spring herbs” are:.
セリ
water dropwort
ナズナ
shepherd's purse
ゴギョウ
cudweed
ハコベラ
chickweed
ホトケノザ
henbit
スズナ
turnip
スズシロ
daikon radish.
.
.
In Japan, they sell these herbs conveniently packed in one. 
.
.

However, since I live overseas, 7 herbs are not readily available. So I just used whatever healthy herbs and veggies I had access to.
.
.
I also tried to make a Keto-conscious Porridge by using chia seeds instead of rice. The recipe is also anti-inflammatory and ALL ORGANIC.
.
.
I really wanted to make this and pray for good health this year.
.
.
So, here it is! My vegan-ketogenic “(More than 7) Herbal base Veggie-Chia Porridge.”.
.
.
::1 Small Serving::
.
.
Herbal Soup:.
1/4 cup dried lemon balm.
1 tbsp dried basil.
Pinch of dried dill.
Pinch of dried rosemary.
3 cups of distilled water.
1/2 tsp Himalayan salt.
2 pinches black pepper.
1 tsp turmeric.
1/2 tsp ginger
1 tsp minced onion.


Boil the above.


Add:
2 tbsp (24g) White chia seeds. (I grinded them for easier digestion and absorption.) 6g Protein/ 0 Net Carb / 0 Sugar/ 8g Fat/ 120 Cal.


Veggies:.
Parseley
Cilantro
2 endive leaves
3 shiitake mushrooms (I actually added the shiitake while making the soup. It adds nice flavor.)
Pea shoots
Kale
Arugula
Spinach.

.
Believe it or not, it came out tasty and had a Japanese flavor to it.  It's a simple, herbal and healthy meal. May the health be with us all!

Unsweetened Chocolate-Drizzled Banana Splits for Breakfast

Good  morning on this Sunshine ☀️ Sunday! おはようございます😃




For breakfast, I had unsweetened chocolate-drizzled banana 🍌 splits with berries. Neither the whipped coconut cream or chocolate bark has sweetners. Bananas make up for it.

朝食は、ベリー類を載せたバナナ🍌スプリットでした。ココナッツクリームのホイップクリームと板チョコを使いましたが、どちらも砂糖やスイートナーを使ってません。バナナの甘味が丁度いい感じです。




Split two bananas into halves, placed cushions of whipped coconut cream (mixed colors of beet root powder and blue superfood powder) for the berry family to lie on. Sprinkled crushed almonds and drizzled melted  100% cacao chocolate bark over them. 

バナナ2本を真っ二つに切って、ビーツ粉と青スーパーフード粉を混ぜたココナッツクリームのホイップクリームを乗せ、ベリー類を寝かせて、砕いたアーモンドをふりかけ、カカオ100%の板チョコ(甘味料なし)を溶かしたのをとろ〜り。

Green Lunch with Anti-Inflammatory Miso-Ginger Dressing

[Anti-Inflammatory Miso-Ginger Dressing and Crispy Green Salad and Green Juice](抗炎症に味噌-生姜ドレッシングでサクサクグリーンサラダとグリーンジュース)🥗🍴



Salad:
Red pepper, carrot, shiitake, cauliflower, cucumber, pea shoots, broccoli, spinach, parsley.

Miso-Ginger Dressing (2-3 servings):
2 tbsp chickpea miso
1/2 cup plum vinegar (any white vinegar)
1/2 cup grape seed oil
1 tsp grated turmeric
1/2 tbsp grated ginger
Pinch of black pepper
Pinch of minced onion
Pinch of garlic powder

(Miso-Ginger dressing is so delicious and anti-inflammatory! 生姜味噌ドレッシング美味し〜くて消炎作用もあってグッドです!)

Green Juice:
Cucumber, pea shoots, endive, broccoli, red grapes, apple, spinach, parsley, ginger, turmeric, black pepper, almond milk.

Tofu Shirataki Vegetable Noodle Soup

[Tofu-Shirataki Noodle Soup](豆腐-しらたき麺スープ)

I had a craving...for a clear soup. There was a “chicken noodle soup” recipe on the back of the “Tofu-Shirataki Fetuccini Noodle” bag, so I replaced the chicken broth part with veggie broth (Used the cauliflower stems and leaves; usually keep veggie ends in freezer). Added chopped veggies, shiitake, grated turmeric, ginger, black pepper and a pinch of Himalayan salt. Just a simple, warm bowl of clear veggie-noodle soup.

正月のお吸い物とか観てて、クリアースープが飲みたくなったので、豆腐しらたきフェタチーニ麺の袋の裏側に載ってる「チキンヌードル」のレシピをビーガン材料で作ってみた。ブロスはカリフラワーの幹と葉っぱ。塩胡椒の他に生姜、ターメリックを追加。椎茸と野菜を細かく切って一緒に茹でる。茹でる時はいつも弱-中火。シンプルでクリアーであったかい。

For salad 🥗, I tossed chopped kale, spinach, arugula, cucumber and carrot in the #hippielane large coconut bowl I got me for Christmas 🎄 (on sale) from @coconutbowls . (This #coconutbowl has the artist’s engraving which says Love Yo Self, Treat Yo Self, Be Yo Self. So, that’s exactly what I’m doing. ☺️💗).

Rasberry Vinaigrette Dressing (for 1-2servings):
1/4 cup raspberries (strain the berries and just use the juice; you can use the pulp for a smoothie).
1/4 grape seed oil
1/4 cup plum vinegar 
1 tsp mustard
2 pinches black pepper 
1/2 tsp tarragon leaves.

Green Juice:
Kale, broccoli, arugula, spinach, strawberries, red grapes, cucumber, turmeric, ginger, black pepper.

First Meal Of The Year: Layered Pancakes

First meal of the year was this layered pancake 🥞 今年最初の食事はこのレイヤード パンケーキ🥞でした。

Ingredients:
3/4 cup Oat flour 
1/4 cup almond flour
Flax egg (1 tbsp flax meal and 2.5 tbsp water)
Blue superfood powder
2.5 tbsp baking powder
3/4 cup almond milk
1 tbsp Apple Cider Vinegar 
Drop of stevia
1 tsp vanilla extract 
Pinch of Himalayan salt

Topped with Maple syrup, Blueberries, Coconut butter.

I didn’t think my #gut would tolerate food @ midnight 🕛 😝. 私のデリケートな消化器官に真夜中🕛の食事はキツイかと... 😂.

Buckwheat noodles, buckwheat noodle soup, kimchi, kimchi juice, natto, grated ginger, pea shoots.

In Japan, we eat Toshikoshi-Soba (not with kimchi-natto, though) in hopes of health and longevity in the coming year. 🎍👍.

☀️Waking up with a cup of warm turmeric latte. ☕️ 朝の目覚めはターメリック ラテ☺️.





Ingredients: 
Turmeric powder, ginger powder, black pepper, cinnamon powder, coconut milk, a drop of vanilla extract, a drop of stevia. .

Put turmeric and ginger powders and black pepper in a cup. Heat the coconut milk warm. Pour it in a cup. Mix them, using the frother. Add the vanilla extract and stevia, and add cinnamon powder, and stir. Ready to serve ☕️😊.

Muddle 6 raspberries and 10 mint leaves in a tall glass, add crushed ice to the top, pour in 3/4 kombucha, add 1 tbsp squeezed lemon juice and 2 drops of liquid stevia. Stir or use the shaker to mix. Garnish with a branch of mints and lemon twist.

Seasoned Cauliflower Rice with Vegetables, Tofu and Baby Bella

[Seasoned Cauliflower-Rice w/ Vegetables, Tofu and Baby Bella](カリフラワーライスと野菜、きのこ、豆腐の炊き込みご飯).

Ingredients:
Cauliflower, soft tofu, baby bella, onion, broccoli, celery, red/yellow/orange bell peppers.
.
I used the food processor to make the cauliflower rice, chopped up the rest and stir-fried them individually (seasoned with garlic, ginger, nutritional yeast, turmeric, black pepper, rosemary, using MCT oil and Olive oil) except for the cauliflower rice.
Put each ingredient in a container (for heating; on low-med heat) in layers with cauliflower rice on the bottom. You want to put the colorful ones on the top. Then...I used the magical #kayanoya dashi-soup over them for cooking until all dashi-soup is absorbed. You can use any liquid/powder soup stock. Preferably organic. .

Coco-Whipped Pumpkin Pie with Nuts and Seeds (Non-Bake version)

Sometimes I like to eat healthy sweets like this raw pumpkin pie. たまに食べると美味しいスイーツ。今回はローパンプキンパイ.

.
Crust:
3/4 cup almonds.
4 pitted dates.
1tbsp almond milk.
.
Fillings:
1 can of pumpkin purée.
2tbsp almond milk.
2tbsp coconut butter.
1tsp vanilla extract.
2tbsp honey.
Sprinkles of cinnamon.
Pinch of sea salt.
.
Coco whipped cream:
1 can of refrigerated coconut cream. Use only the white creamy part. Not the coconut oil(use it for smoothies later).
.
Toppings:
Crushed almonds, pistachios, pumpkin seeds, coconut flakes, hemp hearts.
.
Blend the crust ingredients and press them down in the 6” springform pan. Blend the fillings and pour into the pan. Whip the coco cream. Spread generously onto the pie. Blend the toppings and sprinkle them onto the whipped coco cream. Freeze and serve.
