【Tahini Tofu-Shirataki Ramen】 (anti-inflammatory broth)

It was a lovely weather day, and I stayed out on the porch all day. Yet, it became a bit chilly after dusk. So, I made a warm bowl of noodle soup with tofu-shirataki noodles. I ran out of miso paste, so I used... Tahini paste 〜!😬 I put Tahini into the heated soup, and it turned to look like ground pork which is used in conventional ramen noodle bowls. Very interesting discovery today!

Ingredients:.
Tofu-shirataki noodles, baby bella mushrooms, rainbow carrots, spinach and baby kale leaves. .

Anti-inflammatory Broth:.
3 cups water, veggie ends, ginger, turmeric, black pepper, veggie broth(I used organic Kayanoya-brand veggie soup powder)...and Tahini paste! Not all of Tahini will dissolve, and does separate in hot soup. Then, you can use the separated Tahini as mock ground pork.

Direction:.
Cook the veggies with MCT oil plus a bit of sesame oil for flavor. Set them aside. Boil the above broth, and put the tofu-shirataki noodles. Once the soup reaches the desired temperature, remove the noodles and transfer them into a serving bowl. Pour the soup into the bowl, and add the toppings, including the separated Tahini.

[Ketogenic] Matcha Balls ([ケトン食系] 抹茶ボール)

[Ketogenic Matcha Balls]

If this reminds you of "Green Tea Mochi Ice Cream," you are not alone.  This is my second time making it, and I keep thinking of the "mochi" version.  Luckily, I'm not much of a 'sweets' fan, however, I do get a craving for it once in a while. I like "Green Tea ("Matcha") flavor, as it is not so sweet. Just a hint of sweetness. This second time making it, I used the "vegan butter" to get more "buttery  flavor."  I just got a Coconut Butter (which the recipe actually calls for) today from Amazon, so next time, for sure, I'll be using it. :) Also, this time, I used a 'food-processor' the first time after hysterectomy surgery, which I have been avoiding the 'shaking' of my internal organs with the vibration from it. Well, my body seems more tolerant now, which is great, because the texture comes out so much smoother than just crushing avocado with a spoon. :))





INGREDIENTS:

1 Medium Avocado

1 tbsp Vegan Butter (Use "Coconut Butter" if you have one)

Drops of Stevia (Use generously to achieve sweetness; some Matcha powder could be on a bitter side)

1 tbsp Green Tea Powder (Last time I used 2tbsp of a different Matcha powder. I think the one I used this time is rather "coloring.")

1/4 tsp Sea Salt



DIRECTION:

1. Put all ingredients in a blender (I used food processor this time; my blender shakes a little too much), and blend until it achieves smooth texture.

2. Place the above (1) in a container, and put it in a freezer until it comes hard enough  and moldable.

3. Make small balls (I used a medium-size avocado, and made 10 balls).

4. Coat the balls in more Matcha Powder. (so it won't get sticky)

5. Serve.  (FYI: I didn't eat all 10 balls at once. So, I kept them in a container in a freezer for 2.5 days. Took me two days to finish eating.)


NUTRITIONAL VALUES: 402 CAL / 38g FAT / 4g NET CARB / 4g PROTEIN

[「ケトン食系」抹茶ボール]

「抹茶餅アイス」を想像してしまうのはあなた一人ではありません。私も、これを作るのは二度目ですが、「餅」バージョンをついつい思い出してしまいます。美味しいもんね。幸運なことに、私は、あまり甘いものは好物ではないのです。でもたまに食べたくなります。なので、この抹茶系の少し甘みが効いてるぐらいがいいのです。今回2回目で、「ビーガン・バター」を使用。レシピは、ココナッツ・バターで、今日ちょうどアマゾンから届いたので、次回はココナッツ・バターで作って見たいと思います。それと、今回は、フードプロセサーを使ったので、スムーズないい具合にできました。子宮全摘手術後、初めて振動する機械を使ったのですが、まずまず身体も対応できるようになったみたいです。前回はスプーンで潰してた。。。



用意するもの:

中くらいの大きさのアボカド 1つ

ビーガン・バター(ココナッツ・バターがあればそちらを是非) 1tbsp

ステビアをできれば充分なくらい (抹茶パウダーによっては結構苦いものもある)

抹茶パウダー 1tbsp (前回使った抹茶パウダーは日本製で薄めだったので2tbsp;今回のは結構濃いので1tbsp)

海塩 1/4 tsp



作り方:

1. 全ての材料をブレンダーもしくはフードプロセサーに入れて、スムーズになるまでブレンドする。

2. (1)を別の容器に入れ替えて、粘土くらいの硬さになるまで、冷凍庫に入れておく。

3. 冷凍庫から出したら、小さなボールの形に丸める。(私は、今回、中くらいの大きさのアボカドを使用したので、ボール10個作れました)

4. 抹茶ボールをさらに抹茶パウダーでコーティングする。(ネトネトを防ぐため)

5. いただきます.  (参照: 一度に10個も食べれなかったので、冷凍庫に2.5日間保存しながら、食べ終えました)

Tahini-Coconut Milk Tofu Curry with Cauliflower "Rice"

[Tahini-Coconut Milk Tofu Curry with Cauliflower "Rice"]

Felt like eating a curry rice, so just to be on a safe side with CARB, I used cauliflower instead of rice.  I've made an 'imaginary rice' with tofu before, however, since I'm using it for the meat substitute, I used cauliflower which actually looks more ricey than tofu. :D  Mixing Tahini, adding nut flavor, with  Coconut Milk (Unsweetened Canned) was a hit! <3


INGREDIENTS:

1/5 Trader Joe's High-Protein Tofu 

1/2 Celery Stalk (Any veggie. I think a red bell pepper would've added a nice color to this dish...)

100g Cauliflower

1/3 Cup (about 3 tbsp) Canned Coconut Milk (Unsweetened) --- Just use the white "milk" part. Save the clear "oil" for other dishes or smoothies. If you put the Coconut Milk CAN in a fridge, they will separate nicely. The white "milk" part will solidify.

1tbsp Tahini Butter

2tbsp Curry Powder

1tbsp Olive Oil (If you'd like to fry the Tofu pieces, which I did this time. Also, to increase the FAT Intake. Next time, I'd try without. Just to try different ways. Probably less greasy!)

Other seasonings: sprinkle of cumin, sea salt, garlic and onion powders. (This part is adjusted to your own taste)


DIRECTION:

1. Steam the Cauliflower, and chop them tiny like 'rice.'

2. Chop the Tofu and Celery (any veggie) into small pieces. Put olive oil in a saucer-pan, and stir-fry them.

3. Add Canned Coconut Milk (Unsweetened) into the saucer-pan, curry powder, tahini butter and other seasonings mentioned above or tailor to your own liking.

4. Serve. :))


NUTRITIONAL VALUES: 503 CAL / 44g FAT / 7g NET CARB / 21g PROTEIN

(Without Olive Oil: 383 CAL / 30g FAT / 7g NET CARB / 21g PROTEIN)

[タヒニ・ココナッツミルク・豆腐カレーとカリフラワー「ご飯」]


カレーライス(日本のカレーのルートは違うけど)を食べたくなって、炭水化物の摂取量を気をつけるように、ご飯の代わりにカリフラワーを使った。ちょっと前に、豆腐をご飯に仕立てて食事を作ったけど、今回は豆腐はお肉の代わりに使っているので、カリフラワーに白羽の矢が。これが、豆腐よりもご飯っぽい。ソースは、タヒニを加えたら、いい感じのナッツ風味が出せて、ココナッツミルク(缶詰のもの、砂糖不使用)とよくブレンドされてヒット作品に!



用意するもの:

 1/5 Trader Joe's の高タンパク質豆腐(普通の豆腐でも全然OK、私は今回はトレジョーのを使用)

1/2 セロリ (何の野菜でも良し〜。赤いピーマンが色合いが良くて合いそう)

100g カリフラワー

1/3 カップ (約 3 tbsp) 缶詰のココナッツミルク (砂糖不使用) --- 白いミルクの部分だけ使う。透明なオイルの部分は他の料理やスムージーなどに残して置く。ココナッツミルクの缶詰を冷蔵庫に入れて置くと、うまい具合に分離するので、いつも常備として置いておく。ミルクの部分が固まってスプーンで取りやすい。

1tbsp タヒニ・バター

2tbsp カレー・パウダー

1tbsp オリーブオイル (豆腐をステーキ風に焼く場合。それと脂質摂取量を増やすために、私は今回使った。次回は無しでやってみようかと。色々違う方法で。多分ギトギトしなくて済む)

他の調味料は、クーミン、海塩、オニオンパウダーなど、好みで味付ける



作り方:

1. カリフラワーを蒸して、ご飯みたいに細かくきざむ。

2. 豆腐を食べやすい大きさに切っておく。セロリ(野菜は何でも良い)も同様。オリーブオイルを鍋に入れて、豆腐と野菜を炒める。

3. 上記の(2)に缶詰のココナッツミルク(砂糖無使用)を足して、カレーパウダー、タヒニバターと他の調味料(上記参照)を入れてかき混ぜる。

4. いただきま〜す :))
